Our tour ended with breakfast on Friday morning. Since an extra day meant no extra vacation time, we decided to spend one last day in Edinburgh before flying home on Saturday.
Edinburgh Gin Distillery

Whisky isn't the only game in town anymore. The craft gin industry has been making a large uprising in the United Kingdom over the past few years. Around 2010, the UK changed the licensing laws for gin distilleries that allowed for smaller distilleries to exist. Thus, gin is having a Renaissance of sorts.
In our extra day in Edinburgh, Sean and I decided to visit the Edinburgh Gin Distillery and take a tour. We'd been on several tours for beer breweries and whisky (with or without the e) distilleries, but never for other alcohols. This tour was very interesting since we didn't really know much about the components of making gin, nor its history. The distillery is quite small and one little still can make quite a bit of alcohol. |
After learning about the process, we were able to sample several of the products made by the company - including 4 gins and a few liqueurs. We also learned about the pairings of different gins with different tonics. I learned so much!!
I highly recommend this tour and company. The location of the distillery is also really cool - it's underground!!

Shopping
Since we had the extra time, this allowed us to save some of our shopping until the end of the trip. We made a trip to Cadenhead's to buy some whisky for a friend back home. We pretty much has our bags filled with stuff, so we just enjoyed a few other places and had nice leisurely last day.
Last Night
Sean and I celebrated our last night with a lovely dinner at Makar's Gourmet Mash Bar and then called it a night. We took a cab to the airport the next day where we had breakfast before heading out on our direct flight home to Chicago. Our flight was uneventful and all of our belongings and gifts made it home in one piece!
